Creamy macaroni and cheese with a difference

This is a recipe I’ve discovered many years ago, somewhere in a magazine. I will NEVER forget….I made it the night I went into labor with my youngest son! Ever since then it’s been called ”Momma’s labor macaroni”. J

It is SO easy to make (it sounds complicated and fussy, but REALLY it’s not) and the kids LOVE it! I make the entire dish in the microwave and then only bake it in the oven for a bit to melt the cheese. Serve it with a green salad and Vienna sausages (hotdogs).

INGREDIENTS

  • 500g macaroni
  • 1 x 410g tin tomato and onion relish
  • 4-6 boiled eggs
  • 250ml fresh cream
  • 125ml cake flour
  • 30ml butter or margarine
  • 250g grated cheddar cheese
  • Mustard powder
  • Seasoning salt (Aromat)
  • Oregano (dried is fine)
  • Salt and pepper to taste

METHOD

  1. Preheat over to 180°C
  2. Boil the macaroni until al dente
  3. Cut the boiled egg in small pieces
  4. Prepare the white sauce:
  • Heat the cream in the microwave for about 2 min on High (don’t allow it to boil)
  • Place the cake flour in a glass bowl or jug
  • Add a little milk to make a thick paste
  • Pour the warm cream over the paste, while constantly stirring to prevent lumps
  • Return to microwave and heat for 1 min on High
  • Add butter to warm mix, stir through and return to microwave for another 1 min
  • Microwave until it thickens, stirring every 30 sec – 1 min
  • Finally, stir in 2ml mustard powder + 2ml oregano
  • Add a handful of grated cheddar and the seasoning (Aromat, salt and pepper)
  1. Add the white sauce to the cooked macaroni and mix well
  2. Spoon a layer of macaroni into a deep, glass dish
  3. Top it off with a layer of tomato and onion relish, followed by the boiled egg pieces and a layer of grated cheddar cheese
  4. Repeat the layers and finish off with a final layer of grated cheese
  5. Place it in the oven for approximately 15 min or until cheese is grilled

TIPS

  • You can add mushrooms and bacon to the mix for added flavour
  • Replace the cream with milk for a lighter meal
  • Garnish with raw tomato before placing it in the oven
  • Sprinkle some paprika over the final cheese layer
  • Add some chillies if your family likes their food a bit ”fiery”
  • Try adding tinned tuna and Bermuda onion

As you can see this is an extremely versatile dish and you can add and substitute ingredients to suit your family’s own tastes.
